Chickpeas and collard greens!

Just when I was thinking the pantry seemed a bit bare (is it CSA Wednesday yet?!), I dreamed up this healthy little breakfast! Inspired by my brussels eggs:

Shredded CSA collard greens sautéed with chickpeas, salt, and a little lemon juice. An easy way to get your greens in the am, and with some cold coffee, it totally hit the spot! Once again reminded, breakfast always tastes better at home 🙂

This also makes a great side dish, and you could put your favorite greens (I used to make this a LOT with spinach) if collards are too cruciferous for you…
