Chia seed muffin

If I can’t make breakfast at home, and can’t make it up to the Bedford Post Inn, and am not in Tulum at Posada Margherita on the beach, but am maybe running a little late for work (what’s new?!?!!??), I know I will always be happy with a chia seed muffin from Le Pain Quotidien… It’s not too sweet, seems like it is made with whole wheat flour, has chia seeds on top, and big chunks of dates and figs within! The top is satisfyingly crispy, but the rest of the muffin is moist- it hits the spot for me everytime, and sometimes I’ll indulge myself to have one for a snack! It’s perfect on its own, but also pairs well with fresh blackberries!
