Yogurt to go

If I know that I have a busy week coming up (this is actually most weeks!), sometimes I like to make some breakfasts that I can take on the go. A little yogurt parfait in a jar not only tastes delicious from the bus, the park, or your desk, it looks beautiful too!

For this one, I did a layer of yogurt, then honey, pistachios and dried cherries, more yogurt, then a layer of honey, hazelnuts, and dried apricots. I think it’s best to end with yogurt on the top because it keeps all your accoutrements secure, but you can do it any way you’d like. Other good things to include are any nuts or dried fruits that you prefer, bananas, cut apple, apricot, ground flax, jam, granola (try to eat the one you put granola in on the same day, otherwise it gets soggy…), and the list goes on and on. It really doesn’t take that much time, but its very gratifying to take out of your bag when hunger strikes!
