The perfect oatmeal

Oatmeal is one of my favorite breakfasts…  In the winter I love how it warms you up and makes you feel quite cozy, and in the summer I make a few servings ahead of time and keep them in the fridge for a cold and healthy morning meal.  Over the years I have been perfecting my oatmeal recipe, so thought I would share it with you!

To begin, put the appropriate amount of water (or even better, use half water and half milk) into the pot with whole cinnamon sticks, star anise pods and cardamom seeds.  Bring this all to a boil and then cut the heat.  Leave this sitting for about a half hour to infuse the water with the flavors of the spices.  Your kitchen will start to smell nice too!

Remove the spice pieces, bring the water back to a boil and add whole rolled oats (none of this instant stuff please…), as well as cut up dried fruits.   It adds a natural sweetness that allows you to skip the brown sugar, and the fruit softens as it cooks with the oats.  Being blessed to live so close to Sahadi’s I like to add dried figs, payayas, and strawberries to my porridge, but you can add whatever you wish.  Hope you enjoy!
